White Chicken Chili

This is a super easy, super fast recipe...adjust as desired.

1 sweet onion, chopped

2-4 garlic cloves, minced

cumin

oregano

1-2 sm cans of chopped green chiles (mild to hot depending on the heat you want)

2-3 # chicken breast, cut into bite size pieces.  We like chicken and beans, so adjust more or less, depending on your family's preferences.

4-6 15oz cans of white beans, rinsed and drained - Great Northern works well...I just keep adding cans until I am happy with the amount.

up to 32oz of chicken broth to your desired consistency...again, I just keep adding until I have it the way I want it.

In a dutch oven, on med-high heat, sautéed onion and garlic in olive oil until cooked and slightly browned...add chicken and start with 1T of cumin and oregano...add more if you want.  Cook chicken until just about done, then add chiles, beans and start adding broth until you like the consistency.  Bring all to a boil and then turn heat down and simmer...about an hour, I guess.  We like it thick...season with more cumin and oregano if it needs it.  Salt and pepper to taste. That's it! 

I serve this with sour cream, shredded jack cheese, chopped fresh cilantro, homemade salsa and guacamole, hot sauce if you like that and whole grain tortilla chips. Tastes even better next day and freezes well.
