Raw Cashew Coconut Cookies

So, you want to try raw foods and don't know where to start?  Here is an easy to make, fun to make with children, deliciously yummy raw cookie recipe... Just prep the cashews the night before and you will be good to go. 

1/2 C Whole Raw Cashews
1/2 C Dried Cherries or raisens
1/4 C Flaxseeds
1/4 C Raw Pumpkin Seeds
1/2 C shredded Coconut
Carob Chips
optional

Soak cashews in glass bowl or jar, cover with filtered water and soak overnight.  Then drain, rinse and dry (I just pat them to somewhat dry with a clean tea towel)

Put cashews, cherries, flaxseeds and pumpkin seeds in food processor. Process until mixture begins to form a ball.  You can add more flaxseeds or pumpkin seeds if the mixture seems too sticky. 

I like carob...a lot, so I add carob chips and pulse a few times.  You could also grind them into the cookie mixture.  

Remove mixture and form into 1-inch balls.  Dredge each ball in coconut.  Then flatten each to form a cookie.  Store in a tightly covered glass container in refrigerator. 

These don't last long at our house! Enjoy!
