Today, we finished up the Luscious Lasagna that I had put in the freezer a couple of weeks ago. This will be the last of the "Lasagna Season" in our house. This vegetarian recipe was delicious and yes, rather luscious. I can hardly believe that with this week comes the beginning of April and the promised springtime. Now, it's time to lighten things up! On to this week's menu:
Monday - Salmon with a Cilantro-Lime Sauce...Mixed Baby Greens Salad with Honey-Cumin Vinaigrette...Sautéed Green Beans in Olive Oil and Garlic with a splash of Lemon.
Tuesday - Shitake Mushroom Pasta... the sautéed Greens will be a mixture of Kale, Spinach and Swiss Chard in Olive Oil, Garlic and Balsamic Vinegar...Roasted Tomatoes.
Wednesday - Ginger-Sesame-Lime Marinated Chicken Breasts with Mango Salsa, roasted Sweet Potato slices drizzled with Orange Juice and Sprinkled with Brown Sugar...Mixed Baby Greens Salad with choice of dressing.
Thursday - Dinner out with the Family.
Friday - It's Friday, you know what that means - it's POW (Pizza of the Week) night...this will be the Vegetarian Gourmet Pizza from Papa Murphy's. We love this pizza!

I like the idea of salmon with cilantro lime sauce! I'm always looking for delicious ways to use cilantro, since you can never buy just a little bit. Here, at least, it always comes in a big bunch and is way more than I need for any one recipe.

Thanks! I ADORE cilantro and use it regularly...many times a big bunch on my salad greens. This sauce is pretty yummy and you could make it creamy or not. I choose not most of the time. I will try to get a recipe up soon. Thanks again for joining in the blog roll.

A few days late, and certainly a few bucks short, but I finally got my menu plan (kind of) done.
Your Shitake Mushroom Pasta sounds great. I'll have to try that soon!
