Chive Talkin' Menu Plan Blog Roll - Week of 4/27/2009

Welcome to another week at the Chive Talkin' Menu Plan Blog Roll!  Thanks so much for visiting and for joining in with your menu plan.  Please feel free to make comments and suggestions.  I would love to hear from you!

We have been teased with spring lately and I am so looking forward to the official opening of the local Farmer's Market next Saturday. Must... have... patience. Now, onto this week's menu plan: 

Monday - Mixed Vegetables with Thai Coconut Peanut Curry Sauce over Brown Rice and Baby Spinach Salad with Dijon Vinaigrette... I like to throw a few dried cherries in the salad.  It makes a nice zing with the vinaigrette.

Tuesday - Lamb Steaks with Rosemary...Garlic smashed Potatoes...tradional style vegetarian Ratatouille.  I think the ratatouille will go nicely with the lamb.  I might add some crumbled feta to it prior to serving. 

Wednesday - BLTA Sandwiches...  the bacon will be Turkey Bacon, Baby Mixed Greens for the Lettuce, Roma Tomatoes and Avocado slices... Oh, I almost forgot...some of my homegrown Mixed Salad Sprouts on top....fresh Fruit Salad and a Cucumber Salad for sides.

Thursday - Salad Night - Turkey Taco Salad...I use Mixed Baby Greens, Black Beans, Red Onions, Tomatoes, Avocado, Salsa, Raw Cheese and Ranch Dressing as toppings.  I love Bolthouse Farms Creamy Yogurt Classic Ranch Dressing...look for it in the refrigerated section of the produce department.

Friday - POW - This will be homemade... No Sauce...Roma Tomatoes, Sundried tomatoes, fresh Basil, Shitake Mushroom with Mozzarella Cheese.  We will also make a Red Sauce Cheese Pizza with fresh Basil for the kiddos.

      Yes! I cannot wait for the Farmers Market!!! It will be interesting what we come home with this early in the season, but I am still excited. POW has been a staple at our house since before children. My DH and I always had different kinds of pizza each Friday... made for easy meals. Back then it was different kinds of frozen pizza LOL We have definitely evolved and that's a very good thing.

    The lamb steaks sound good! I was just looking at a lamb steak recipe in Real Simple. It sounded like a much, much faster and simpler version of this Basque recipe I make. I'll have to try it out, and see how it compares taste-wise.

    LOL... That is a great question! Well, to me, there is a difference. Mashed potatoes = milk, butter and salt and whipped with the mixer. Smashed Potatoes = olive oil and salt and mashed with potato masher or big fork. Sometimes I add roasted garlic or powered garlic in a pinch. Would love to hear about your lamb recipe that you found. Mine is no big deal... just minced garlic, fresh rosemary or dried, salt and pepper then broiled or grilled. We love lamb with dijon mustard or mint jelly.
