Chive Talkin' Menu Plan Blog Roll - Week of 5/4/2009

Welcome to another week at the Chive Talkin' Menu Plan Blog Roll!  Thanks so much for visiting and for joining in with your menu plan.  Please feel free to make comments and suggestions.  I would love to hear from you!  Don't forget to keep checking back as menu plans are added.

This week, I did not make the opening of the Farmer's Market...bummer!  BUT, I did make it to my next favorite place to shop for food - Whole Foods Market.  Seriously, I could spend all day in there shopping and people watching.  It's a great store.  Hopefully, I will get to the Farmer's Market next week.  Now, onto this week's menu plan: 

Monday - Homemade Chicken Fingers with Get Out of Town Sauce.  This sauce is my own creation which ends up somewhat like Thousand Island dressing.  Although, as I am writing this, I am beginning to think I may just play around with some ideas.  Currently, I am into horseradish, so I may do something with that.  Steamed and then smashed Cauliflower - instead of smashed Potatoes...sautéed Red Chard and Spinach in Garlic, Olive Oil, Balsamic Vinegar and Lemon Juice

Tuesday - Happy Cinco de Mayo - a great excuse to have the Turkey Taco Salad from last week's menu that we didn't have because I didn't feel like making or eating taco salad that night.  See post.  I will use Mixed Baby Greens...Black Beans...Red Onions...Tomatoes...Cilantro...homemade Salsa...raw Cheese and Ranch Dressing as toppings.  Homemade Guacamole on the side.  You can't have too much guacamole - period.  I love Bolthouse Farms Creamy Yogurt Classic Ranch Dressing...look for it in the refrigerated section of the produce department.   

Wednesday - Salmon with Cilantro Lime Sauce...Israeli Couscous "buttered" with Coconut Oil ...Sautéed Zucchini and Yellow Squash.

Thursday - Salad Night - Super Tabouli with a smooth Tahini Sauce...White Bean-Roasted Red Pepper Dip with Pita Bread...Fresh Fruit Salad

Friday - It's Friday and it's POW (Pizza of the Week) Night!  Last week, I said we were going to do homemade, but we ended up getting takeout cheese from our favorite pizzeria in town.  This week, we are having homemade.  At least, as of right now.  No Sauce...Roma Tomatoes...caramelized Onions...fresh Basil...baby Bella Mushrooms with Mozzarella Cheese.  We will also have a Red Sauce Cheese Pizza with fresh Basil for the kiddos.

      Thank goodness I checked the date too... cause Cinco de Mayo certainly came up fast, didn't it? Fresh, homemade guacamole does go "ick" quick, so I never plan to have leftovers. Here is my super secret guacamole recipe: Avocado mashed with a fork, a couple tablespoons of salsa - your homemade or favorite kind, fresh cilantro, mix well and then check your seasonings to see if you need more garlic, salt, cumin... that's it! It is way easier and just as tasty IMHO to make it this way then with a guacamole "recipe." Try it and tell me what you think.

      Me too! I love the farmer's market at its height during the summer months... spring in Wisconsin is a bit hit and miss.

      I just "found" coconut oil this fall. Love it on sweet potatoes, on toast, oat cream, in smoothies, on rice, oatmeal... adding to coffee sounds interesting - I will try it.

    Wed-Fri - Leftovers! Haha we always double or triple recipes so we have plenty to last us. If we get bored of those two dishes, we have some hummus in the fridge and plenty of beans and grains to whip something up.

      Hey! So glad you made it. DH and I really like no sauce pizzas... well really just lightly brushed with olive oil and rubbed with minced garlic for the "sauce." I am sure a raw sauce could be made with pureed tomatoes, fresh herbs and seasonings...would be very good...cut the tomatoes with a bit of honey. Our children's favorite is cheese or cheese and mushroom with a red sauce, but they will eat the no sauce pizza too. We also really like the veggie gourmet from Papa Murphy's.
