Chive Talkin' Menu Plan Blog Roll - Week of 5/25/2009

Well, I wanted to give you all an update on our Fish Tacos... I used Tilapia which represents my first time cooking and eating this fish. The recipe I went with was a chili-lime rub which was very tasty. I broiled the fish instead of grilling and it turned out wonderfully. DD13 enjoyed the fish sans taco. DH thought they were amazing, which was really a good thing, since they were his request. I think I would like a hard shell tortilla or even a tostada more instead of a soft flour tortilla. Fish Tacos are a great summer meal and I will definitely be making them again. I encourage you to try them if you haven't before.
Also, we did not have our garage sale...again...don't laugh. I decided to have it when the city has their city-wide garage sale day. This gives me few more weeks to get my act even more together and purge the house...yet again.
Another holiday is upon us... Memorial Day... a day to remember the sacrifices made by our fellow Americans to protect the freedoms of our great country... We are grateful and thankful for their service. So, today (and everyday) enjoy your family and love on them just a little bit more.
Now, here's the plan:
Monday - Memorial Day is also a day when we, along with countless of other Americans, grill outdoors to celebrate the beginning of summer. We will be starting with some Mojitos...I prefer Vodka Mojitos. Ahhh... It is summer in a glass. DH is on grill duty. He will be grilling Inside Out Burgers...one of his specialties. These are burgers that have the cheese inside them...Homemade Buns...burger toppings of Lettuce, Tomatoes, Onions, sautéed Mixed Mushrooms...Greek Salad...Strawberries with homemade Whipped Cream.
Tuesday - DH is MOD (Manager on Duty so he will not be joining us for dinner.) The children have requested a traditional spaghetti dinner, so that's what I am making. Whole Wheat Spaghetti with Marinara Sauce...Artisan Bread...sautéed Kale and Garlic in Olive Oil.
Wednesday - Grilled Salmon with dilled Horseradish Sauce... Did I mention that I love horseradish sauce on just about everything? Sautéed Zucchini and Yellow Squash...sliced Tomatoes...Mixed Greens Salad with Dijon Vinaigrette.
Thursday - Salad Night - I welcome a very light meal tonight... Quinoa Tabbouleh Salad...fresh Fruit Salad.
Friday - It's Friday, you know what that means? It's POW (Pizza of the Week) Night! We will make our usual favorite at home.

Thanks! No Farmer's Market this weekend... but I did make it to the next best thing (I think at least) - Whole Foods. Oh, yeah! POW strikes again! Enjoy!

I love the name of the burgers--we love making stuffed turkey burgers but we just call them 'stuffed burgers' so not original

Up in Minnesota they call them Juicy Lucy's but I prefer Inside Out Burgers...We eat turkey burgers too...never thought to stuff them. Thanks for the idea.
