As most of you already know, Mr. Linky was sick last week and I am hoping he is feeling better now. We will try again linking up. This is a new Mr. Linky and quite frankly, I'm not really sure how he will act. June 1st! I am so psyched that summer is here. Well, maybe not temperature-wise but certainly chillaxing wise. School will be officially over this Friday. Although, when you homeschool it's a lifestyle and the learning continues even during the summer break. We are all looking forward to summer vacation out East...visiting friends and family... and being home grilling, playing, swimming and everything else summer entails. Summer is the best in the Midwest... It's what keeps us here.
You will definitely notice our menu changing as the weather warms up... I don't use the oven as much. The only soup I make is gazpacho. We drink more smoothies. We juice a bit more. You will see the same things more often... more veggie sandwiches, more salads and more grilling...mostly fueled by whatever is local and in seasonal... cause that's just the way we roll in the summer.
Can't wait to see what you have cooking or uncooking this week! Here is what we are having:
Monday - I always ask for requests from the family and this week DH requested Portabella Mushroom Sandwiches with roasted red peppers, mozzarella cheese, fresh basil and spinach leaves... Cauliflower Salad (cauliflower, arugula, green onions, red peppers in an olive oil, orange zest and juice, capers, thyme, red wine vinegar dressing)...roasted Sweet Potatoes.
Tuesday - Zesty marinated grilled Chicken...Garlic smashed Potatoes and my Big Greek Salad.
Wednesday - Taco Pizza...since Friday will not be POW night this week, Wednesday will be! I thought I would do something different and make a taco inspired pizza... I might make half veggie with seasoned black beans and half seasoned ground turkey...or I might make it all seasoned ground turkey and black beans... don't know until I am making it... Toppings will be Jack cheese, onions, tomatoes, shredded lettuce, no Iceberg, please or spinach, black olives, fresh cilantro, salsa and avocado with sour cream and Ranch dressing on the side. My that sounds yum to me!
Thursday - Salad Night - Two Bean Salad - green beans, chickpeas, cherry tomatoes, artichoke hearts, kalamata olives, red onions, parsley in a tarragon dressing... Spinach Salad - red bell peppers, shitake mushrooms, pine nuts, parmesan cheese in an olive oil, balsamic vinegar, garlic and shallot dressing... Citrus Fruit Salad.
Friday - Last day of school celebration - Dinner out tonight...yeah!
We eat lots of fresh fruit and fruit salsas... strawberries are the fruit of choice right now. I love strawberries and lime together. Actually, I love lime with lots of things. So, for a treat this week, I'll be making a Lime Dipping Sauce for the Strawberries...sour cream, honey, lime zest and juice...simple.

And, Jenna, we are back in sync! Tues = grilled chicken! (In our case, it's because the Hubs is off that day, and I'm taking my mom to an appointment on the other side of town.) Also, I looked at two-bean salad recipes the other day, but none sounded that great to me. Yours does, though! I'll have to try doing one with your ingredients. Have a great week!
