Chive Talkin' Menu Plan Blog Roll - Week of 6/22/2009

This weekend I went to the Farmer's Market and Whole Foods Market and purchased some great food for this week: kale, strawberries, blueberries, cherries, salmon, green beans, young coconuts, nectarines, among other things... I love summer!
Here is what we are eating this week:
Monday - salmon marinated in a fresh orange ginger marinade and grilled...sautéed kale in olive oil, garlic and lemon... Israeli couscous "buttered" with coconut oil.
Tuesday - DH requested chicken bratwurst from Whole foods this week. He will boil these in beer first, then grill...sliced tomatoes, fresh mozzarella and basil...steamed green beans.
Wednesday - DH is participating in a Big Brother/Big Sister Bowl for Kids Sake so dinner out tonight.
Thursday - Salad Night - white bean salad (olive oil, garlic, lemon juice, sprouts, fresh mint, tomatoes, capers, red onions and feta cheese)...big green salad...artisan bread.
Friday - We are heading to the Twin Cities for the weekend...so dinner out on the road. Probably not POW tonight.

Hey! Thanks for stopping by... I hope you enjoy the gazpacho! I truly will be making some form of gazpacho weekly either for lunches or dinner. With a dollap of plain, raw yogurt, it was so good! I wrote a post a while back on young coconuts... called "I am in Love with a Nut." We drink the water and eat the meat...mmmm....think I will go have one now. LOL. Have a great week!
