Welcome to another week at the Chive Talkin' Menu Plan Blog Roll!

What a great weekend we had visiting my family in Stillwater, Minnesota!  We celebrated Father's Day with my Dad a week late and feasted on a delicious spread that my Mom prepared - salmon, chicken, cauliflower, sliced tomatoes, mashed potatoes, and homemade blueberry peach cobbler - yummmmm!  What a beautiful day.  Thanks, Mama! 

Last week, the orange ginger marinade for the grilled salmon was a hit.  It would have been even better, tastier if I had marinated it overnight... note to self for the next time.  The white bean salad was fabulous - loved the mint, feta, lemon, etc.  It was even better the next day.  I love leftovers! 

Can hardly believe July 1st is this week!  Where did this month go?  Do you have a 4th of July tradition?  We used to...sigh...deep sigh.  We used to live in a rural area and would host a big, annual fireworks display, food and root beer float party.  We even went so far as choreographing the display to music (thanks, Ed!)  Since we moved last September to a new town, we can't do the fireworks at home anymore...(and sadly those friends are now three hours away.) But we'll still have something grilled, the floats and go see some "works" nearby. May you enjoy our nation's independence to the fullest this weekend, remembering how blessed we are to live in the good old U.S. of A.    

Now, here is what we are eating this week:

Monday - Southwestern Gazpacho (We LOVE gazpacho!  So, I will be making it often during the summer and vary the recipe from time to time.  This one has a southwestern flavor with an added poblano chile.)...cowboy cavier (no tortilla chips this time...instead I making it into a salad by adding shredded red and green cabbage to the cavier.  I hope this turns out well.)

Tuesday - Grilled Chicken Satays...Asian coleslaw...sticky brown rice "buttered" in coconut oil.

Wednesday -  Two Bean Salad with Tarragon Dressing.  The beans in this salad are green beans and chickpeas, along with cherry tomatoes, artichokes, kalamata olives, red onion and Italian parsley in a tarragon dressing.  I will probably make some deviled eggs and herbed flatbread for on the side.      

Thursday -  Salad Night - Tuna, Veggies and Whole Wheat Penne Pasta in a Balsamic Vinaigrette.  This is a very tasty pasta salad with cucumber, tomato, bell peppers, red onion and fresh basil leaves...mixed green salad on the side. 

Friday -  It's Friday!  You know what that means?  It's POW (Pizza of the Week) Night!  This week I thought I would make a Greek inspired pizza - no sauce, just olive oil, garlic, roma tomatoes, feta cheese, kalamata olives, roasted red peppers, fresh oregano...and a red sauce, cheese and 'shroom pizza for the children.

    I'm digging the Greek pizza. Yum! It took great restraint not to make your gazpacho again this week. I don't want to burn out on it. lol!

      Hey!  Just felt like something a bit different with the Greek pizza.  About gazpacho, I could eat it everyday in the summer!  Seriously! LOL.

      Cowboy Caviar is totally delicious - The one I make has avocado, corn, black eyed peas, green onions, garlic, roma tomatoes, cilantro.  Although, recipes may differ, all cowboy caviar recipes should have black eyed peas.  Tonight, I added purple cabbage and was it ever good!  I will probably add the recipe this week so look for it if you are interested.

    We are having homemade artichoke and feta pizza this week as well.

    I am experimenting with my crockpot on Care group nights so that my parents, the babysitters, have a good tasting and substantial yet easy for me to make meal.

    Just a little food update from our kitchen.

      Hi Katie!  So good seeing you yesterday.  I miss you and your family a lot... and of course, 4th of July with everyone. 

      Yummmm....artichoke and feta pizza sounds delish.  What are you making in the crock pot?  For whatever reason, I always think of the crockpot use in cooler weather.  But you know what?  Summer is probably even a better time to use one because you don't need to turn the oven on.  Kitchen stays cooler.
