I trust you had a fun (and safe) Holiday weekend. I love Fourth of July! We spent the day at Great Wolf Lodge, Wisconsin Dells. The Lodge knows how to put on some fun family activities. Afterwards, we came home and ate lots of delicious (and not-so-good-for you) food. It's only once in a while and everything in moderation is OK. Of course, the day wouldn't be complete without fireworks. Unfortunately, after the first bang, DS2 wanted no more. So, I sat in the car with him and waited for the rest of the family. It was good to keep expectations low when mixing fireworks with a two-year-old. Perhaps, next year. We came home and had our traditional root beer floats (yep, pretty much at 11 o'clock at night!) and watched the girls and little man put on a "variety" show for us - so much fun! What did you do? Have any fourth of July traditions?
BTW, the Southwestern flavored gazpacho last week was not our favorite... but the Greek pizza rocked! I will definitely be making that again! Not much raw on the dinner menu this week, but some good vegetarian dishes. Also, on for this week, I will be making gazpacho for lunches and raw cashew carob chip cookies for treats.
Now, here is what we are eating this week:
Monday - Grilled Salmon...Israeli couscous...mixed veggies (whatever looks good, just lightly steamed with fresh herbs.)
Tuesday - DH is MOD (Manager of Duty) tonight, so the kiddos and I are having whole wheat angel hair pasta with Roma tomatos, capers, garlic, parmesan cheese, fresh basil...steamed broccoli...Caesar salad.
Wednesday - Black Bean Enchiladas (avocado, black beans, roasted red pepper, cheddar cheese, corn, red onion, cilantro, homemade salsa on whole wheat tortillas) Served on shredded romaine with lime wedges.
Thursday - Grilled Steak with horseradish sauce...mashed cauliflower (instead of potatoes)...my big phat Greek salad.
Friday - It's Friday! And usually that means POW (Pizza of the Week) Night, but not tonight, because we'll be O-U-T!

I LOVE salmon too! We try to have it once a week. Tonight I marinated it in lime juice, cilantro and honey before DH grilled it to perfection. Sadly, no leftovers!

So had the kids planned to put on a variety show or was it an impromptu sugar-high-inspired surge of talent?
