Ratatouille

Ratatouille is one of our favorites. It is easy to make and tastes even better the next day - serve hot, cold or room temperature. Can serve with chichen or lamb, whole wheat pasta or brown rice. Also tastes fabulous as a pizza topping.

1 medium eggplant, peeled and chopped
1 large sweet onion, sliced and halved
2 garlic cloves, minced
1 yellow pepper, cut into strips and halved
5 large tomatoes, cut into chunks
3-4 zucchini - green or yellow, sliced
~ C of fresh basil, chopped
Salt and pepper to taste

Saute in order of listed ingredients in olive oil...until veggies are soft...

Optional: add sausage...pinch of ground fennel seeds...top with parmesan cheese or feta cheese.

If I am making it with sausage, I use turkey or chicken Italian sausage, and cook that first in a bit of olive oil and garlic until cooked and then add eggplant, etc. to same pan.
