I can hardly believe it is August already! This week will prove to be a busy one, as I am planning on doing ANOTHER garage sale with a friend in a neighboring town. I love garage sales, more the social part of it, than anything. So, here's to a successful sale and another week of glorious summer!
BTW... The Veggie Towers we had last Monday were awesome! I decided to roast the veggies instead of grilling; and with the balsamic vinegar reduction and sprinkling of feta cheese, they were the bomb! Oh yeah, the Cilantro Pesto and Goat Cheese topped chicken breasts were so good, I am using the same pesto on our salmon.
Here is what we are eating this week:
Monday - Grilled Salmon with Cilantro Pesto and Goat Cheese Topping...homemade salsa...steamed green beans from Ena's garden...sweet corn.
Tuesday - Grilled Chicken...homemade Caesar salad...sliced tomatoes with fresh basil and fresh mozzarella.
Wednesday - Chow-Chow - sweet corn, tomatoes, cucumber, red bell pepper, cabbage, green onions, cauliflower, celery, fresh dill...white bean and roasted red pepper dip and flatbread.
Thursday - BLTs or ALTs or BLATs... fresh fruit salad.
Friday - It's Friday! And you know what that means - POW (Pizza of the Week) Night... Since, this will be a garage sale day, we'll definitely be carrying out from a local pizzeria.

The pesto with salmon sounds awesome! I bet it goes just as good with fish as with the chicken. You and your garage sales...lol!
