Don't forget to keep checking back as menu plans are added. The whole purpose of this menu plan and blog roll is to introduce you to the joys of menu planning (yes, there are joys!) and to inspire you to health by providing to you a few flexitarian, vegetarian and raw menu ideas and recipes.
So... let's just say I'm not happy about the Cowboys loss. And move on with it. It's not easy living in Packer-land.
To re-cap last week's menu... the Grown-up Mac and Cheese was a hit! I have never made homemade mac and cheese before. The kiddos like Annie's Pasta, so I never really bothered. Oh...my...stars! I told them we never have to buy boxed mac and cheese again. *WINK* DH said this about the Chicken piccata - "You can make it ANYTIME!" The girls said the sauce reminded them somewhat of DH's Chicken Saltimbocca. That's a good thing... because it's my favorite dish. The Veggie Potpie turned out great too... I left out peas and celery, because they are my least favorite veggies... and just had carrots, mushrooms, onions, garlic, cauliflower and zucchini. I am going to make a chicken potpie soon... just to please the crowd.
So, here's this week's menu plan:
Monday - Citrus Grilled Salmon... simple sautéed red chard... Israeli couscous.
Tuesday - Broccoli Sesame Noodles - vegetarian. It also has carrots, green onions, cilantro and black sesame seeds in a Tahini - Sesame Ginger Sauce.
Wednesday - Mediterranean Chicken and Veggies - a great one dish meal that can be adapted to many different flavors - not just Mediterranean. This one has bone-in chicken, zucchini, eggplant, red onion, garlic, roma tomatoes and feta cheese. I may add some red potatoes too. More about one dish meals later.
Thursday - Chickpea Spinach Curry - vegetarian. Very excited about this one. Lots of yummy spices with chickpeas, tomatoes, spinach, cilantro and coconut milk... brown basmati rice.
Friday - It's Friday! You know what that means... POW (Pizza of the Week) Night! I imagine it will be carry out from our favorite local pizzeria.

I'm not a vegetarian, but I do try to go meatless a couple of nights a week at least. Your menu always sounds delicious. Thanks for sharing.
