Mindful Menus - Week of 4/5/2010

Welcome to Mindful Menus - A Menu Planning Blog Roll to inspire health through real food! 
 
It is my hope that this blog roll will inspire others to health through menu planning and to introduce you to the joys of menu planning.  Yes, there are joys!  If you are new to menu planning, I am more than happy to answer any questions you may have. 

Don't forget to keep checking back as menu plans are added.

Yes, I am a bit late getting my menu up.  The only excuse I have is that we had a wonderful Easter celebration with my brothers and their families yesterday.  I ate entirely too much food and couldn't even think about planning a menu when we got home last night.  Please forgive me.  

Here's what's on the menu this week:
   
Monday - Easter leftovers (and using up what's in the fridge and freezer) - grilled rosemary and garlic lamb... thai curried hummus to dip veggies in ... creamy barley and tomatoes... steamed green beans... steamed broccoli.

Tuesday - Vegetarian - Burritos are always a big hit with everyone in the family - black bean, sweet potato and corn (frozen) burritos - raw cheddar cheese, fresh cilantro, homemade guacamole and salsa on whole wheat tortillas.  Served with mixed baby greens and lime wedges.

Wednesday - Yes, southwest flavors two nights in a row!  Grassfed Beef Tacos - MY request - I am craving hardshell tacos with all the typical fixings plus more homemade guacamole and salsa.
 
Thursday - Vegetarian - pasta salad with cannellini beans - this main dish salad has whole wheat penne, roasted asparagus, green olives, white beans and roasted red peppers in a dijon mustard dressing... Can easily add tomatoes or tuna for a non-veg dish.  

Friday - It's Friday... you know what that means - Yes, POW (Pizza of the Week) Night!!!
