Mindful Menus - Week of 4/12/2010

Welcome to Mindful Menus - A Menu Planning Blog Roll to inspire health through real food! 
 
It is my hope that this blog roll will inspire others to health through menu planning and to introduce you to the joys of menu planning.  Yes, there are joys!  If you are new to menu planning, I am more than happy to answer any questions you may have.

Ah...ah... ahhhh....chooooooo!!!!  4 out of 5 of us have been suffering miserably from allergies this week.  We think the culprits are the Bradford Pear Trees that line the streets in our area.  Since we can't cut the trees down, I found a local apiary and purchased some raw honey.  We have been taking some everyday - up to one tablespoon.  We are also taking homeopathic remedies.  Finally, after several days, we are feeling less congested and sneezy.  Relief has come our way.
 

Oh, one more thing... I am so excited for an upcoming giveaway - let's just say it will make your life easier, healthier and more delicious.  Stay tuned!  

This week is a super short, busy week...      

Here's what's on the menu this week:
   
Monday - O-U-T and About

Tuesday - O-U-T and About

Wednesday - Wild Caught Salmon with Cilantro Lime Sauce... Israeli Couscous "buttered" with Coconut Oil... Sauteed mixed greens - kale, swiss chard, spinach.
 
Thursday - Vegetarian - Cheese and Veggie Omelets... My Big Phat Greek salad... fruit salad 

Friday - It's Friday... you know what that means - Yes, POW (Pizza of the Week) Night!!!  This week's will be a homemade one... not sure what kind yet.
